2/3 cup flour
1/2 cup sugar
4 teaspoon vanilla extract
3 tablespoon cocoa powder
1/2 medium sized bar of dark chocolate (You can melt more at that time if needed)
4 tablespoons cream
4 tablespoons milk
1/2 teaspoon baking powder
Break the chocolate into pieces.
On a bain-marie (Put a small pot above a saucepan of boiling water), put the chocolate and cream till chocolate melts.
Beat the egg and sugar until fluffy.
Mix the flour, cocoa and baking powder in another bowl.
Add oil, vanilla extract and milk to the beaten eggs.
Gradually add flour mixture to egg mixture while mixing.
Put some cupcake mixture in the mould so that it fills about 1/3. Then add a dollop of melted chocolate and again add cupcake mixture leaving some space at the top for the cupcake to rise.
Bake at 180 C till toothpick/knife pricked in the cupcake comes out clean and they have risen.
If serving later, warm for a while so that the filling melts again and serve with vanilla icecream. YUMMMMM!
