Banana Bread – Recipe

I made this yesterday and it was an absolute hit! An easy recipe, no fancy ingredients required and absolutely delicious 🙂
For this you need:
1 3/4 cup flour
3/4 cup sugar
2 large eggs
3 large overripe bananas, mashed (About 1- 1 1/2 cup)
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla essence
1 teaspoon cinnamon
1/2 cup unsalted butter, melted
3/4 cup chopped walnuts (optional)
1/4 cup raisins (optional)
For Garnish: Chopped bananas (not overripe) (optional)
METHOD
In a bowl, beat the eggs and sugar till white and fluffy. Add vanilla essence, cinnamon and butter. Then add the bananas and beat again.
In another bowl, mix the flour, baking soda, baking powder and salt.
Then, fold the dry ingredients into the egg mixture. The batter should be chunky so don’t mix or beat at this point otherwise the bread may become hard and chewy.

Then add the walnuts and raisins and again just fold it in.
Add the batter to a greased baking tray and for garnish you can put the chopped bananas on the batter right now in any design you want.

Bake at 180 C for 55 – 60 minuted or till pricked knife/toothpick comes out clean.
And it’s ready!

      I was a bit confused whether my blog would qualify or not because it isn’t a reality blog and I don’t exactly write about my day to day life and thoughts?
